Chicken satay with peanut sauce

3 Tb lime juice
1 tsp curry powder
2 tsp honey
1/2 tsp ground coriander
1/2 tsp. ground cumin
1/8 tsp. salt
2 cloves garlic, minced
1 lb. boneless, skinless chicken breast, cut into 1 inch cubes

Mix all ingredients except for chicken in a large ziploc bag. Add chicken and refrigerate for at least 2 hours. Thread chicken on skewers and grill over medium heat for about 2-3 minutes per side. Dip in peanut sauce.

Peanut Sauce:
2/3 cup vanilla yogurt
1/4 cup creamy peanut butter
1/4 cup coconut milk
1 Tb. soy sauce
1/4 tsp red pepper sauce

Beat all ingredients with wire whisk.
